Fried Tofu with Tomatoes (Đậu Hũ Chiên Sốt Cà Chua)

When I was younger, my mom made me all types of tofu dishes as a healthy choice of food. I didn’t like it that much growing up until a lot later. I realized that I started to like eating tofu when my friends were ordering it at the restaurant or making at their homes. I slowly started to like tofu and that’s when I learned how to make my mom special fried tofu with tomatoes. However, my mom uses to pre-fried tofu, but in my case, I prefer frying them myself.

INGREDIENTS

  • 2 boxes of firm tofu (14 oz)
  • 5 medium roma tomatoes (diced)
  • 2 tbsp of minced ginger (my bf likes a lot of ginger, but you can alter to 2 teaspoon of ginger if you like)
  • 3 cloves minced garlic
  • 1.5 tbsp of fish sauce
  • 1.5 tbsp of soy sauce
  • 1-2 tbsp of vegetable oil
  • 1 cup of chicken broth or water if you don’t have
  • Oil to fry
  • Green onions to garnish (optional)

DIRECTIONS

Tofu

Heat up the oil in medium heat. Cut tofu into thumb size tofu and drained the water. Pat the tofu dry with paper towel. Once the oil becomes hot, put the tofu in and fry until they are golden crispy. Leave on a paper towel for it to dry out the oils.

Fried Tofu with Tomatoes

Heat up the tbsp of oil and add the garlic and ginger in a medium size pan or wok. Stir it until it becomes aromatic. Then throw in the tomatoes and stir for another 2 minutes. Next add the fish sauce and soy sauce and stir for another 2 minutes. The tomatoes should be a bit soggy and then stir in the tofu and cook for another 2-3 minutes. Serve over rice and you can add chopped green onions for garnish as well.
